First lady Melania led the menu: a delicate garden herb velouté paired with a hearts of palm salad finished with crispy shallots and micro mint. The second course was spring herb ravioli with ricotta, morel mushrooms and herbs from the White House Kitchen Garden, dressed in a light parmesan emulsion. The main course featured a classic Dover sole meunière in nutty brown butter, served with ramps, snow peas, pavé potatoes and vibrant parsley oil.
Dessert was a beehive-shaped chocolate gâteau with vanilla bean crémeux, almond joconde and brown butter crumble, accompanied by crème fraîche ice cream and White House honey.
